- Unsalted Butter
- Miso Paste
- Dried Nori
- Seaweed Paste
- Dijon Mustard
- Shucked Oyster
- Ginger
Description:
Grilled with blowtorches, this Oyster has an intense seaside flavour thanks to the seaweed butter. There is a gentle sweetness from the mustard and miso, which is balanced by the clean, tart ginger.
Method:
- Make a compound butter of Nori & Japanese Seaweed paste.( Unsalted butter, Miso paste, dried nori, seaweed paste and Dijon mustard)
- Smear a teaspoon of the softened butter onto the Shucked Oyster.
- Blowtorch it for at least 60 seconds.
- Garnish with pickled ginger.
